Meet the Saint in the kitchen

Executive Chef, Dan Lockhart has harvested considerable experience in his career, garnished with a five-year stint in Melbourne, working at the likes of Republica, Captin Baxter and Press Club.

More recently, he was the 'Mibrasa Master' at one of Tauranga's best restaurants, our friends at the world-ranked Fife Lane in Mount Maunganui, renowned for his sumptuous steaks and his careful selection of seasonal produce.

It will be a nod back to those Australian days for Dan, in joining The Saint, with a focus on smaller, taste-loaded dishes that bow down to the heroic wine offerings; the secret to success that make the myriad of hidden wine bars and laneway locals so iconic in Melbourne.
